Ingredients: (servings for 4)


• 1 ripe mango, peeled, pitted and (diced)
• ½ cup red bell peppers (diced )
• 1 small cucumber (diced)
• ¼ cup celery, raw (diced)
• 1/2 lime
• 1/2 lemon
• ½ cup cilantro (chopped)
• 1 green onion (chopped)
• Salt and pepper to taste
• ½ jalapeno, optional (sliced)

Directions

1. In a medium bowl, mix the mango, red bell pepper, cucumber, celery, cilantro, green onion, jalapeno (optional), salt and pepper.

2. Cut one slice each from the lemon and the lime, chop and add to the mix.

3. Squeeze the juice from the rest of the lemon and lime and add it to the mix.

4. To blend the flavors, cover and refrigerate for about 30 minutes before serving.
