Simple Spicy Soup

Ingredients: (servings for 6-8)

• 1/2 medium head cauliflower , broken into large florets

• 3 medium carrots, sliced

• 2 celery stalks, sliced

• 1 sweet potato, large cubes

• 10 oz. lima beans, frozen

• 1 papaya, cubed (for plating)

• 1 small portabella mushroom, sliced

• ½ cup cilantro leaves (for plating)

• 1 Serrano pepper, cut in half length wise (optional)

• 1 tbsp. Seasoning & no salt soup mix , oregano, basil, black pepper


1. This soup can be made in slow cooker. Leave about one third of the carrots and celery stalk for plating. First add the sweet potato, carrots, lima bean, Serrano pepper, seasonings and about eight cups of water.

2. When these are halfway cooked—still crunchy-- add the cauliflower and the mushroom. Don’t overcook it, keep it fresh.

3. When plating, garnish the bowl with the thinly sliced carrot, celery stalk, papaya, avocado and cilantro leaves. Make a half slice of whole wheat toast and enjoy.

This soup is very light, refreshing and easy to make. All the colorful ingredients provide wonderful texture and a nutritionally balanced meal. The soup can be stored in the fridge for about 3-4 days.
