Stir Fry Pasta Avocado

Ingredients: (servings for 3)

  • 4 oz Beef Round or Pork Loin
  • 10 oz. Mixed vegetables. For example: green beans, sweet pea pods, bell peppers, zucchini and asparagus
  • 2 large clove garlic
  • 1 small avocado
  • 4 oz. Whole wheat pasta (fettuccine, linguine or spaghetti)
  • Seasoning: black pepper, oregano, basil, parmesan,
  • 1.5 tbsp. Canola oil
  • 1 tbsp. Vinegar (balsamic or apple cider)


  1. Cook pasta per instruction on the package.
  2. Season the meat with black pepper, oregano, and dry basil.
  3. Chop vegetables and one clove garlic. In a bowl, coat vegetables lightly with 1 tbsp. oil, season with black pepper.
  4. In a stir fry pan or wok heat ½ tbsp. oil medium high.
  5. First stir fry the meat, then add the vegetable mix and cook for a few minutes. Then add a little balsamic vinegar, cook for another few minutes.
  6. To preserve the most nutrients leave the veggies a little bit undercooked so they still have their bright color.
  7. By now the pasta should be ready. Break up the avocado with a fork in a small bowl, add the 1 clove garlic, parmesan and mix it into the pasta.

  8. To serve, place the pasta first on a plate, spoon over the stir-fry and sprinkle with fresh basil.
